  • Enzyme electrode has better selectivity, higher sensitivity and faster detection speed. Therefore, they are applied widely in the field of food safety.This paper reviewed the introduction, principle and classification of the enzyme electrode and its research progress, which included food-borne pathogens, biological toxins, drug residues, food additives, allergen, etc.in the field of food safety.The future development of enzyme electrode is prospected.
