Research progress in patulin of fruits and its products

  • Patulin is a toxic secondary metabolites, it widely exists in fruits and its products. It is one of the most harmful mycotoxins to human beings.This paper briefly reviewed the research situation of the patulin in the fruits and its products in recent years. This articles introduced its properties and analyzed its biosynthesis mechanism and biological degradation mechanism, particularly focused on the detection methods of patulin and biological control of patulin.
