Progress in the research of plant protein materials for probiotics encapsulation

  • Owing to their prebiotic effects on human health, probiotics are widely used in the food industry.However, probiotics are very sensitive to the external environment, and they cannot resist host gastric juice, bile and other harsh environments, which leading to their survival declined significantly.Encapsulation technology of probiotics can solve this problem and taking plant proteins as wall materials to encapsulate probiotics not only can improve their survival in the poor environment, but also help their location released in intestinal tract as a carrier. This paper discussed soy protein, pea protein as wall materials to encapsulate probiotics and the applications of probiotics encapsulation in food, in order to provide a reference for plant proteins encapsulation technology to encapsulate probiotics.
