Comprehensively analysis of components in Oviductus ranae

  • In order to provide the reference for the use of Oviductus ranae,the moisture,ash,protein,amino acids,fatty acids,and cholesterol in Oviductus ranae were analyzed comprehensively.The results showed that Oviductus ranae was rich in crude fat and protein,the content of unsaturated fatty acids( UFAs) was up to 66.13%,monounsaturated fatty acid( MUFA) 38.18%,saturated fatty acid( SFA) 34.16%,polyunsaturated fatty acid( PUFA) 27.95%.Atherogenic index( AI) and thrombogenic index( TI) were 1.40 and 0.70,respectively.The content of amino acids was 11.49 g/100 g,the ratio of eight essential amino acids was51.61%.The content of cholesterol was up to 451.52 mg /100 g.Oviductus ranae was rich in fat- soluble components,was a very healthy functional food.
