Self-assembly of foodborne protein and their applications

  • Protein self- assembly plays a much more important role in food and material field due to its natural advantage,nontoxic,better biodegradable and good biocompatibility.In this paper,we introduced several common protein self- assembly forms,including common protein self- assembly,protein- protein self- assembly,protein- polysaccharide self- assembly,protein glycosylation self- assembly,and protein inorganic self- assembly nanometer materials.Finally,the application of the protein self- assembly was briefly introduced.
