Galla chinensis water extract/konjac glucomannan used as coating to extend the storage life of chilled meat

  • Galla chinensis water extract was prepared from Galla chinensis,and its total phenolic and flavonoid contents were measured.The antioxidant and antibacterial activities in vitro of Galla chinensis water extract were evaluated.A coating composed of Galla chinensis water extract and konjac glucomannan( KGM) was used to the preservation of chilled meat. Galla chinensis water extract showed the 2,2'- Azinobis-( 3- ethylbenzthiazoline- 6- sul- phonate)( ABTS) free radical scavenging capacity and inhibitory activity against Staphylococcus aureus and Escherichia coli. After chilled meat treated with Galla chinensis water extract / KGM coating,the total number of bacteria,p H,TBARS values,and color parameters of chilled meat were significant decreased compared with uncoated chilled meat. Based on the total number of bacteria,the storage life of coated chilled meat stored at 4 ℃ was extended for 5 days compared with uncoated chilled meat.The Galla chinensis water extract / KGM coating liquid has the preservation effect on chilled meat.
