Influence of microwave radiation on wheat seed microstructure

  • Endosperm and germ microstructures of wheat seeds treated by microwave were observed by scanning electron microscope and transmission electron microscope,respectively.The effects of microwave radiation on the microstructures of the wheat seeds were investigated.The damaged starch contents were also measured.Results showed that germ cell was sensitive to microwave that 700 W,30s were enough to change the germ cell structure and cause metabolic disorders.700W,40~50s of microwave radiation would cause deformation and fracture of endosperm starch granules. Meanwhile,damaged starch content increased with temperature increased.
