Research progress of food authentication technology

  • Based on the public awareness of food safety and food quality gradually strengthened,food quality certification has become a rapidly developing field.Food authentication technology is guarantee of food quality by the technology in food discrimination.In this paper,analysis methods and techniques of food discrimination at home and abroad were summarized. Applicability and characteristics of various analytical methods were compared,respectively.The application potential of mass spectrometry in food discrimination was analyzed.Prospect of mass spectrometry in food quality inspection and food authentication were discussed.
