Progress in the application of metabonomics methods in food-derived ACE inhibitory peptides

  • Metabonomics as an emerging field of food science and technology is gradually applied to the molecular action mechanism and metabolism of bioactive peptides. This paper presents an overview of the angiotensin converting enzyme inhibitory peptides and metabonomics. In addition,the metabonomics methods used to further study of the angiotensin converting enzyme inhibitory peptides was reviewed,aimed to support extensive application reference of metabonomics in the food-derived peptides field.
