Advances on research of different storage methods on nutritional quality of fruits and vegetables

  • Fruits and vegetables are the main resources of nutrients such as vitamins and minerals for human beings.Postharvest fruits and vegetables still proceed active metabolism that results in loss of nutrition.The process of this nutritional loss is mainly influenced by the methods employed for the storage of fruits and vegetables. This mini- review paper summarized the influence of different storage methods on the nutritional attributes of fruits and vegetables and their research progresses. Furthermore,application of different storage methods had been envisioned in light of keeping nutrients of the stored fruits and vegetables for the purpose of providing useful references for the storage industry of fruits and vegetables.
