Progress in evaluation methods and action mechanism of antioxidant activity for plant protein- derived peptides

  • Natural,safe,and efficient antioxidant peptides derived from many plant proteins have received much attentions from researchers at home and abroad. The evaluation methods and the molecular mechanism of antioxidant activity for plant protein- derived peptides were summarized in the present review,which will shed some lights on the further development and utilization of antioxidant peptides derived from plant proteins.
