Research process in ginger chemical composition and biological activity

  • Ginger is a traditional kind of spicy vegetable,with medicine and food homology.The research findings on the potential applications of ginger which include the extraction,assay and bioactivity of ginger flavonoids,gingerols,ginger polysaccharides,ginger oil and ginger glycoprotein was reviewed. In addition,toxicological studies of ginger were also addressed,which aimed to the comprehensive development of ginger.
