Research progress on the structure and security of the microbial oil

  • Microbial safety analysis and microbial oil safety evaluation,the fatty acid composition and triglyceride structure of microbial oils,the physical property of microbial lipid contain oxidation kinetics and crystallization kinetics were analyzed through the domestic and abroad.Compared the relevance of microbiological lipid structure and safety is necessary.Then the research of microbial oils on the current status were introduced.The relationship between the safety of microbial oil and the structure of the grease is important for the application of microbial oil in food industry.
