Research progress on the microorganisms of Chinese ricewine

  • The research progresses of microbial resources in seriflux,xiaoqu,yeast starter,jiuqu,fermentation broth of Chinese ricewine and other ricewines were reviewed and the development results of microbial breeding technology in Chinese ricewine were concluded. In order to enhance the research level of microbiologies in Chinese ricewine, using modern biotechnologies to study the microbial resources, diversity, phylogenesis,ecological distribution,brewing function and breeding in Chinese ricewine and other environmental microbiologies which should have an impact on Chinese ricewine production. The study must be comprehensive,in-depth and systematical. It had important theoretical significance and application value on healthy development of Chinese ricewine industry.
