Determination of the in vitro antioxidant capacity of quinoa seeds extracts

  • The aim of this study was to investigate the in vitro antioxidant activities of extract from quinoa seeds collected from Shanxi using various methods,including DPPH· and ABTS+· scavenging assays and ferric reducing antioxidant power(FRAP) assay. The results showed that the quinoa extract had strong scavenging activities for DPPH· and ABTS+· radicals. The radical scavenging IC_(50) values of quinoa extract were(43.13±2.41) mg/m L and(27.91±1.46) mg/m L for DPPH· and ABTS+· radicals,respectively. The FRAP value of quinoa was(1.90±0.10) mg Fe SO_4/g. The quinoa extract also significantly inhibited free radical-induced peroxidation of linoleic acid and oxidative degradation of bovine serum albumin. The present study demonstrated the in vitro antioxidant potential of quinoa seeds extracts,providing scientific basis for the estimation of the in vivo antioxidant activities of quinoa seeds.
