Metagenome technology and its applications on food science and enzymic preparation products development

  • Metagenome technology is an approach for screening target or functional genes by total DNA direct extraction from environmental samples,followed by gene libraries construction and screening. It has a great significance in studying food microorganism,the degradation of hazardous substance,food nutrition and enzymic preparation product development. Metagenome technology and its applications on food science and enzymic preparation product development were summarized in this article.
