Capture conditions of gelatin with formaldehyde

  • In order to develop a new type of formaldehyde capture agent used in food,the characteristics of gelatin with formaldehyde reaction were investigated under time,temperature,p H value and the concentration of gelatin in this paper. Based on single factor test,the Box-Benhnken central composite experimental test was designed by using optimum range for the reactivity of gelatin as formaldehyde scavenger with formaldehyde.The results showed that the optimum gelatin capture conditions:capture time 10 h,trapping temperature 30 ℃,p H value of 8.0,gelatin concentration 1.0%,formaldehyde capture rate of 80.97%.
