Research progress in bioaccumulation of trace elements in edible fungus

  • Trace elements are a series of nutrition that needed necessarily by human beings. In nature,trace elements are existed in inorganic form,unevenly distributed and not easy to be absorbed by human body.In recent years,the trace elements such as zinc,selenium,iodine,iron could be accumulated and transformed their inorganic state into organic state by many kinds of edible fungus,which were indicated in many researches.In this paper,the mechanisms of accumulation of trace elements in edible fungus were generalized,the research progress in accumulation of trace element in Ganoderma lucidum,Lentinus edodes,lammulina velutipes and other kinds of edible fungus were summarized and the prospect were predicted.
