Study on the monosaccharide compositions,physico- properties and preparation technology of soluble dietary fiber by enzymatic method from Pyracantha Fortuneana

  • The enzymatic method was adopted to extract soluble dietary fiber from Pyracantha Fortuneana. The experimental factors including the amount of cellulose,extract time and liquid- to- solid ratio on the extraction ratio of soluble dietary fiber( SDF) was adopted.Meanwhile,the monosaccharide compositions and physico- properties of the dietary fiber from Pyracantha Fortuneana was researched. The results showed that,the optimal extraction conditions of the soluble dietary fiber prepared by enzymatic method were as follows: the amount of cellulose was0.83%; extract time was 2 h and the liquid- to- solid ratio was 23 m L / g,the predicted value and measured value of the soluble dietary fiber were 5.97% and 5.91%,respectively.The main monosaccharide compositions of the dietary fiber from Pyracantha Fortuneana were xylose,arabinose,rhamnose and sorbose,also contained a small amount of fructose and mannose,among them with xylose content was the highest,reached to 33.56%. The results of the physico- properties experiments showed that,the dietary fiber from Pyracantha Fortuneana possessed good WHC and OHC,and had strong glucose- adsorption capacity.
