Research advance in carotenoids from wolfberry fruit and production and corresponding processing stability

  • The classification,functional activity,processing stability and detection method of carotenoids in wolfberry fruit and production were introduced. The aim of this work was to provide a technical support for wolfberry fruit during production,processing and storage,and theory basis for further development of wolfberry fruit health products.Based on these,the outlook of the tendency of carotenoids in wolfberry fruit was put forward.
