Study on preparation of carotenoids microcapsules from kelp

  • To enhance the stability of carotenoids from kelp,microencapsulation technology was used for embedding carotenoids of kelp,the embedding rate and the yield of the products as the indexes. The optimum technological conditions were determined by single factor and orthogonal test. The results were shown as following∶ gelatin∶ β-cyclodextrin∶ sucrose( 2∶1 ∶ 2) as wall material,the core and wall material ratio of 1 ∶ 5,emulsifier Tween-80∶ Span-80( 3 ∶ 1) dosage of 0.3%,homogenization pressure 35 MPa,homogenization for one time. Under these conditions,the microcapsules embedding rate was as high as 92.16% and the yield was 89.95%.In addition,the microcapsules not only has a better stability,but also has a good protective effect on the core material.
