Analysis of nutritional components in walnut milk

  • The nutrient components including basic elements,fatty acids,mineral elements and amino acids of a kind of walnut milk were measured and analyzed by comparing with those of human milk.The results showed that the contents of fatty acids,most of the amino acids and mineral elements in the walnut milk were close to or higher than those in human milk.Especially both of the ω-6 and ω-3 PUFAs were much higher than those in human milk.Meanwhile some nutritive substances such as a few amino acids( Pro,Met) and minerals( K,Se,Cu) were deficient compared with human milk. These results indicated that walnut milk was a kind of healthy drink with abundant nutrient elements,and also suggested a possible way to improve the nutritive value of walnut milk by complementary addition of some nutrients.
