Isolation and identification of lactic acid bacteria in the finnish traditional fermented dairy viili

  • Lactic acid bacteria from the finnish traditional fermented dairy viili were isolated and identified,and one strain was isolated.The strain isolated from viili was identified by Gram staining 、morphological characteristics、sugar fermentation test、physiological identification with API 50 CHL kits and 16 S rRNA sequence alignment.Antibacterial activity of the strain and exopolysaccharides from strain was studied through oxford cup method.The results showed the strain was Lactobacillus paracasei,and Escherchia coil and Staphylococcus aureus could be suppressed by fermentation broth of the strains obviously,bacteriostatic diameter of Escherchia coil was 29.02 mm,the further research of viili can be achieved.
