Study on producting antioxidant peptide from goat placenta by different proteases

  • Study on production antioxidant peptides from goat placenta by proteases on hydrolysis of degree,peptide yield and a evaluation of scavenging rate of DPPH radical.Hydrolysis by eight proteases which under their optimal conditions.The results showed that the scavenging rate of DPPH radical of Flavourzyme,Alkaline and Neutrase were 0.6420、0.7120 mg / m L and 0.6781 mg / m L respectively. Flavourzyme,Alkaline and Neutrase were the best enzyme to product antioxidant peptide from goat placenta.
