Study on the extraction and function of Heritiera littoralis seed protein

  • The effect of process on extraction rate of Heritiera littoralis seed protein was discussed in this study.The factors of p H,temperature,time,and liquid / solid ratio were studied by single factor experiments,and Box-Behnken design and response surface methodology were applied to confirm the optimum experiment condition.The highest protein extraction rate was 50.85% under the condition: temperature( 55℃),p H10,extraction time 2h,liquid / solid ratio 11∶1. The water retention capability,foaming properties and foaming stability of Heritiera littoralis seed protein were better than SPI; the oil- absorbing,emulsifying capacity,and emulsifying stability of SPI were better than Heritiera littoralis seed protein's.
