Research progress in development and utilization of tartary buckwheat resource in China

  • Tartary buckwheat, one of the traditional minor crops, which is abundant in nutrition and flavonoids such as rutin and quercetin, plays a dominant role in china. With increasing demands from domestic and international markets, the tartary buckwheat industry in china is faced with many opportunities and challenges.In order to make a healthy and sound development of the industry in our country, there is an urgent need of a systematic development and utilization, an improvement of the added value, and an acceleration of the process of industrialization development. This article reviewed the previous studies on tartary buckwheat nutritional value and further processing products and industrialization, and made some suggestions and prospects on the future development of tartary buckwheat industry.
