Research progress in aflatoxins and ochratoxin A in rice

  • Mycotoxins are toxic metabolites produced by some filamentous fungi, which occur in foodstuffs and feeds. They have been a hazard to man and animals. The physical, chemical properties and hazard of aflatoxins and ochratoxin A were introduced. Due to the risk to human and animal health, their contamination situation, the maximum residue levels and analysis method in rice were summarized. The aim was to provide reference for mycotoxins research.
