Optimization of pulsed light on the accumulation of GABA conditions in the process of brown rice germination

  • The enrichment of GABA during brown rice germination process was promoted by using pulsed light method. Meanwhile, the optimal treatment conditions were optimized by using response surface methodology:single energy of 400 J, flash number of 277 and flash distance of 11.3cm. Under the optimized conditions, the GABA content in germinated brown rice could reach to be 345.7mg/100 g.
