Antioxidant activity of anthocyanin crude extracted of purple corn kernel

  • Anthocyanin crude extracted of different purple corn kernel were studied. The anthocyanin, total phenolic content and antioxidant activity including reducing power, hydroxyl radical and super- oxide anion radical scavenging activities of purple corn kernel anthocyanin extract and the relationship between anthocyanin, total phenolic content and antioxidant activity were also analyed. The result indicated that there were great differences in anthocyanin, total phenolic, reducing power, hydroxyl radical and super-oxide anion radical scavenging activities among the six purple corn hybrids which FS7011 had the highest anthocyanin, total phenolic content. The anthocyanin and total phenolic of purple corn anthocyanin had significantly positive correlation with reducing power, hydroxyl radical and super-oxide anion radical scavenging activities. Purple corn grain had high content of anthocyanin and possessed strong antioxidant activity, which could be used to develop natural antioxidants.
