  • β- primeverosidase belongs hydrolases, it can specifically hydrolysis β- primeveroside, and its generation is very important in the aroma and defense systems of tea ( Camellia sinensis) .The research progress inβ- primeverosidase were summarized, including its enzymatic property, its separation and purification methods, its activity determination method and its molecular biological characteristics.The applications prospects ofβ- primeverosidase were also analyzed.
