Comparative analysis of the content of biogenic amines in merchant Sichuan pickles

  • The determination of biogenic amines in thirty Sichuan & Chongqing pickle samples purchased from the local market was conducted by HPLC.Results showed that the level of putrescine was the highest ( 47.44 mg / kg) , followed by histamine ( 34.21 mg / kg) , serotonin ( 28.74 mg / kg) and cadaverine ( 26.79 mg / kg) .The level of spermine was the lowest ( 0.7mg / kg) . The detection rate of the other six kinds of biogenic amines was 100%, except for spermine ( 16.67%) and 2- phenylethylamine ( 96.67%) . The total content of biogenic amines in different pickle samples varied widely, ranging from 50.48 mg / kg to 453.53 mg / kg. Among thirty pickle samples, only one pickle sample from manufacturer 3 had a high level of biogenic amines. According to FDA provisions, all the pickle samples were within the safety standard range.
