Abstract
Objective: To detect and analyze the contents of nutrients and bio-active substance chalcone in Angelica keiskei.Methods: The contents of nutrients and chalcone were separately determined by national standard method and UV-VIS spectrophotometry.Results: The results obtained an average of 4.71% protein, 1.65% reducing sugar, 3.64% fiber, 0.19% lipids, 84.79% moisture, 0.72% ash.VB1, VB2, VC, folate, VB12 had an average of 0.02, 0.71, 45.90, 0.30 mg /100 g, 3.20μg /100g; The contents of K, Ca, Mg, Fe, Ze were 110.00, 140.21, 1.50, 14.03 mg /100 g, 20.67μg /100 g.The content of 18 kinds of amino acid was 2.85 g /100 g and 8 kinds of essential amino acid was 1.11 g /100 g, accounting for 38.9% of the 18 kinds of amino acid. The content of bioactive chalcone was 0.75%. Conclusion:Angelica keiskei had a variety of nutrients which were good for people's health. Protein and fiber were higher compared to most other common vegetables.The amino acid pattern was closed to ideal amino acid pattern.Rich VC, VB2 and folate VB12, organic germanium and bioactive substance chalcone were also found in Angelica keiskei, and the vitamin was richer in the leaf.It had good value and health benefits with broad application prospects.
