Analysis and evaluation on the nutritional components of wild Corbicula Fluminea from Hongze lake

  • In order to make the use of corbicula fluminea resource comprehensively and scientifically, the nutrients ( moisture, protein, crude fat, ash, amino acids and fatty acids) of wild corbicula fluminea in Hongze lake were determined.The results showed that the water content of corbicula fluminea in Hongze Lake was 87.27%, ash content was 7.57%, protein content was 66.61%, crude fat was 11.67%, the total amount of DHA and EPA was16.78%, essential amino acid content was 164.9mg /g, which occupied 39.6% in total amino acid.
