Effect of pulsed light treatment on the endogenous enzyme activity of germinated brown rice

  • The effects of pulsed light through different single energy, flash time and treatment start time on the activity of alpha-amylase, protease, and glutamic acid decarboxylase (GAD) during the brown rice germination was studied. The results showed that brown rice after soaking, single energy of 400J, flash time of 300, the germination of 25h, α-amylase activity reached 12.38mg (g·min) -1, protease activity reached 102.36mg (g·min) -1, glutamic acid decarboxylase (GAD) activity reached 10.83mg (g·min) -1, the maximum value were 2.87, 1.30, 2.16 times higher than non-treated group. High-intensity pulsed light treatment can inhibit endogenous enzyme activity of germinated brown rice. Suitable pulsed light for processing brown rice after soaking them can improve the endogenous enzyme activity.
