Effects of different factors on the rheological properties of starch

  • Research methods and influence of different factors on the rheological properties of starch were reviewed.The effects of starch sorts, concentration of slurry, temperature, modification methods, other components and processing conditions on rheological properties of starch were introduced in detail. It is suggested that the investigation on rheological properties of starch should be combined with study on starch structure, to better understand the factors affecting the rheological properties of starch.The findings will be used to expand the range of applications of starch.
