  • Carotenoids are a class of natural pigments which have high application values in food, medicine and other industries. Carotenoids are widespread in aquatic animals and play a pivotal role in sensory evaluation of aquatic product. Progress on composition and content, function, extration and analysis methods of carotenoids in aquatic animals was mainly reviewed in this paper in order to provide reference for future research.
