The application of the irradiation technology in Agaricus bisporus preservation

  • The short life of Agaricus bisporus is an obstacle to its distribution and marketing.Irradiations have been shown the potential ability in extending the postharvest shelf life of the fresh mushroom.This paper elaborated the food irradiation for mushroom.The effect of irradiation on the sensory quality, nutritional quality, shelf- life, microbiology and food safety were discussed as well.This paper present some sights for further application research and development.Irradiation will be commonly used in edible fungus preservation, as consumers are becoming more aware of the role of food irradiation in regards to food safety and product shelf-life extension.
