Effect of high oxygen modified atmosphere packaging on quality of fresh-cut carrots

  • The purpose of this study was to evaluate the effects of high oxygen modified atmosphere packaging on the quality of fresh-cut carrots during storage.Sensory index, respiratory intensity, PPO activity, POD activity, and PAL activity were determined every three days.The results showed that modified atmosphere containing 40% O2 was not suitable for fresh-cut carrots.Modified atmosphere containing 100% O2had the best fresh-keeping effect on fresh- cut carrots.It could be effectively suppressed respiration intensity, PPO activity, POD activity and PAL activity.Packaging with 60% O2and 80% O2also had the fresh-keeping effect on fresh-cut carrots, but it could not match the effect of packaging with 100% O2.
