Safe assessment of two Enterococcus faecalis

  • Two Enterococcus faecalis coded as KLDS6.0610 and KLDS6.0611 were separated from traditional dairy. They could produce bacteriocins active against L.monocytogenes and had good stability in the processing. The objective of the present study was to evaluate the safety of the Enterococci. In the acute toxicology experiment, the weight changes of animals was normal. Two strains did not present multi-resistance to antibiotics and had no transferable plasmid. They did not produce nitrate reductase, bile acid carboxylase and amino acid decarboxylase. The content of GSH and MDA were normal. They had no hemolytic activity and translocation phenomenon. So, both KLDS6.0610 and KLDS6.0611 were safe.
