The comparison of Chinese and international standards of wheat product

  • China is the largest country in both wheat production and wheat acreage.With the large attention paid in nutritional value and application of wheat starch, the safety of wheat starch and its products have been highly concerned.The sanitation index of wheat starch included sulfur dioxide, heavy metals, and microbiological index. Firstly, the processes of wheat starch production were introduced in this review. Secondly, both Chinese and international standards of wheat starch were compared and analyzed. Finally, the significance of sanitation index was discussed.
