Optimization of preparing technique of lycopene microcapsule by uniform design and orthogonal design

  • Lycopene microcapsule was prepared by ultrasonic emulsification method and spray-drying using a wall system consisting of Arabic gum and modified starch.The formula and technology of microcapsule preparation was investigated by single factor and uniform design experiments, and the optimal preparation technology were optimized by orthogonal array design as following: the Arabic gum and modified starch as the wall material with its ratio at 1∶2, the solid content in the wall material 10%, the suitable proportion of core material and wall material 1∶1, the amount of tween- 80 2%, the time of ultrasonic- assisted emulsification 10min under the contitions of temperature 30℃ and ultrasonic power 160W.The optimum spray drying conditions for microencapsulation of one layer lycopene were: the inlet temperature was 190℃, and outlet temperature was 80℃, the inlet wind pressure was18MPa, and under these conditions the capsulation efficiency was 85.12% while its productivity reached 60.50%, quantity of lycopene carrying was 34.87mg /g.The average size of lycopene microcapsule was around 8.13μm, and the distribution of 75% particle size was 515μm.
