Research progress in production and application of microcapsulated oil and fat powder

  • Microcapsulated technology was an important application technique, it had been widely used in various food industries recently.The production principle of microcapsulated oil and fat powder was introduced briefly, the characteristics of material used for capsule wall were analyzed, various main technology especially the spray drying technology, and main application of powdered oils were summarized.
