Characteristics and application of microcrystalline cellulose in food industry

  • Microcrystalline cellulose, as a new type of functional natural polymer, is widely used in many fields, including food, pharmaceutical, cosmetics and some other industries. In addition, microcrystalline cellulose had arosed more and more attention, because of its unique physcal and chemical properties. The article summarized the physicochemical property of the microcrystalline cellulose, these applications in the food industry (such as dairy products, frozen foods and meat products) , and the prospects for the development of microcrystalline cellulose prospect.
