Application of chromatography and electrophoresis in separation and analysis of whey protein

  • Whey protein is the main economic value in whey with various physiological functions. Chromatography and electrophoresis are one of the significant separation and analysis techniques in the aspects of chemical, medicine and food.However, the recycling technology of whey is not maturity in China especially in separation.The article summarized the progress of whey isolation and analysis in order to provide basis for this kind of matter.
