Germicidal efficacy of neutral electrolyzed water against the apparatus for the production of aquatic products

  • In order to test the germicidal efficacy of neutral electrolyzed water against the apparatus used in aquatic products processing factories and Staphyloccocus aureus, Shigella flexneri, Vibrio parahaemolyticus, Escherichia coli and Salmonella typhimurium with respective concentrations of bacterial suspensions of 107CFU /mL were chosen as the subjects of the test. The results showed that within 2min, when the available chlorine in neutral electrolyzed water reached more than 78.6mg /kg, the bactericidal rates of all bacterial strains reached more than98%.The bacterial contamination and bacteriostatic tests showed that when the apparatus were contaminated, neutral electrolyzed water killed almost all three kinds of bacteria ( Staphylococcus aureus, Vibrio parahaemolyticus, Escherichia coli) within 2min. The handwashing sterilization test and the comfort survey of operators found out that neutral electrolyzed water could reduce the bacterial concentration from 250CFU /mL to 5CFU /mL within 30s and below; neutral electrolyzed water was odorless, non- irritating. Thus, neutral electrolyzed water could be used as the ideal sterilizer for aquatic food processing.
