Review on antioxidant peptide and its chemical activity assay methods

  • Antioxidant peptides have been paid much attention in the recent ten years, due to their natural and safe properties.In the present review, the sources of antioxidant peptides were summarized and the advantage or disadvantages of the methods for antioxidant activity assay were compared. Besides, the chemical assays were classified into two categories including hydrogen- atom- transfer ( HAT) reactions and single- electron- transfer ( SET) reaction, based on the different reaction mechanism.Cellular antioxidant activity ( CAA) assay method was introduced here as well. The contents in this paper could supply useful information for further structure- activity relationship study of antioxidant peptides.
