Evaluation of the antioxidant and anti-fatigue effect of soy oligopeptide

  • Total antioxidant capacity, superoxide anion radical scavenging, the clearance rate of hydroxyl and alkyl radical scavenging of soy oligopeptide was determined respectively in order to study the antioxidant activities of soybean oligopeptides.Swimming time, the content of plasma urea nitrogen, liver glycogen and muscle glycogen of mice was determined respectively through animal experiments in order to test the effect of soy oligopeptide anti-fatigue.Results showed that the total antioxidant ability was 13.86U/mL, the maximum ability to anti-superoxide anion was 158.67U/L, the maximum inhibition rate to hydroxy free radical was 17.11%, the maximum inhibition rate to alkyl free radical was 31.97%, the anti-fatigue effect of soybean oligopeptide studies showed that, the longest swimming time was 45.51min for the high dose group (8.0g/kg) , the lowest BUN content was 17.05mmol/L for the high dose group (8.0g/kg) , the highest content of liver glycogen was 17.45mg/g tissue for the high dose group (8.0g/kg) , the highest content of muscle glycogen was 1.53mg/g tissue for the medium dose group (4.0g/kg) .Thus, soybean oligopeptide had antioxidant and anti- fatigue effect.
