Study on preparation and activity of the selenium-enriched corn peptides facilitating alcohol metabolism

  • In order to get the higher activities selenium-enriched corn peptides with facilitating alcohol metabolism than that of corn peptides, the enzymatic hydrolysis of selenium-riched corn protein was studied.The enzymatic hydrolysis was optimized by single factor experiments and orthogonal test, the recovery of selenium/ peptides and the scavenging activity toward hydroxyl radical (·OH) as the indexes.The facilitating alcohol metabolism activity was studied by animal experiment.The optimal conditions were determined as follows:the material to solvent ratio of 1∶35 (w/v) , the temperature of 60℃, the Alcalase dosage of 0.6%.Under these conditions, selenium recovery rate was as high as 81.78%, the peptide recovery was 73.32%, the degree of hydrolysis was 10.50% and the scavenging activity toward ·OH with an IC50 value was 3.57mg/mL.The BAC was most significantly reduced in selenium-enriched corn peptides group at the dose of 200mg/kg doses when compaird to the corn peptides group with the same dose (p<0.01) .The selenium-enriched corn peptides at the dose of 400mg/kg could reduce 50.99% of BAC.The facilitating alcohol metabolism activity of seleniumenriched corn peptides was higher than corn peptides.
