Research progress in extraction and purification of marine lecithin
Marine lecithin refers to the lecithin from marine organism.It is very valuable because it is rich in unsaturated fatty acids like EPA and DHA.At present, most of the lecithin is from egg yolk and soybean.General situation of Marine lecithin in order to provide reference for developing utilization of marine lecithin was summarized in this paper.
