Advances in the study of collagen and its active peptide of fish skin

  • Collagen and its active peptides of fish skin have been described in an increasing number of studies in recent years. The functional properties of the different extracts depend on the different collagen extraction methods, which are often closely related to the structure. This review summarized the literature on methods of collagen production and discusses the main functional applications according to the natures of different extracts. Furthermore, the advances in the study of structure and active peptides of collagen were also discussed with an insight to the future research needs.
